Grandma’s Orange Roll

The Grandma’s Orange Roll recipe yields 10 (1-inch) slices.

1 cup sifted flour
1-1/2 teaspoons double-acting baking powder
1/4 teaspoon salt
Confectioners sugar
3 large eggs, beaten
1 cup granulated sugar
6 tablespoons orange juice

Line a shallow 15 x 10 x 1 inch pan with waxed paper, extending one-inch beyond edge of pan.

Sift together flour, baking powder and salt.

Beat eggs until thick and lemon colored; add sugar gradually.

Blend in orange juice; fold in dry ingredients.

Pour batter into pan.

Bake in moderate oven, preheated to 375° F. for 20 minutes.

Sift confectioners sugar on a dish towel three or more inches larger than pan.

When cake is done, invert onto dish towel.

Carefully remove waxed paper from cake.

Cut crisp edges from cake.

Spread orange filling on cake within one-half inch of edges.

Gently roll up like jelly roll; open end on underneath side.

 

Florida Orange Filling:

1/2 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
1-1/4 cups orange juice
1 egg, slightly beaten
1 tablespoon butter or margarine

Combine sugar, cornstarch and salt in saucepan.

Blend in orange juice; mix thoroughly.

Cook over medium heat, stirring constantly until mixture thickens.

Cook an additional 5 minutes.

Stir small amount of orange mixture into beaten egg; add to mixture in saucepan, stirring constantly.

Cook three minutes.

Blend in butter.

Remove from heat; cool, at room temperature, while preparing cake.
