Golden Orange Jubilee

The Golden Orange Jubilee recipe yields 4 servings.

1 pint orange sauce (see below)
4 slices pound cake
1 pint ice cream
4 cubes sugar
2 tablespoons lemon extract

Prepare orange sauce and cool.

Place 4 cubes of sugar on plate.

Prepare individual servings of pound cake on dessert plates with scoops of ice cream.

Pour sauce over ice cream.

Place desserts on tray.

Pour lemon extract over sugar cubes.

Put 1 cube in the center of each dessert and light.

Sugar will caramelize and break apart in sauce.

Orange Sauce

2 tablespoons cornstarch
1 cup sugar
1/2 teaspoon salt
2 cups orange juice
3 tablespoons grated rind of orange
2 tablespoons butter or margarine
2 oranges, sectionized

Combine cornstarch, sugar and salt.

Add orange juice gradually and bring to a boil.

Add rind and butter and cook over low heat 3 to 5 minutes.

Just before serving, add sections of orange.
