Florida Orange-Lime Pie

Florida Orange-Lime Pie recipe yields About 6 servings.

1/3 cup orange juice
1 envelope unflavored gelatin
4 egg yolks
1/3 cup sugar
1 tablespoon grated orange peel
1/4 cup lime juice
4 egg whites
1/4 teaspoon salt
1/2 cup sugar
1 baked (9″) pie shell
2 cups whipped cream or topping

 

Stir gelatin into orange juice.

Combine egg yolks, 1/3 cup sugar, orange peel and lime juice in top of double boiler.

Stir until smooth.

Cook over boiling water, stirring constantly, until thickened.

Add orange-gelatin mixture; stir well.

Remove from heat.

Beat egg whites with salt until stiff.

Gradually beat in 1/2 cup sugar.

Fold in hot orange mixture.

Pour into cool pie shell.

Chill until set.

NOTE:  For later use, place pie in freezer at 0°F.  When frozen hard; wrap, seal, label and date.  Return to freezer for up to 1 month.
To use, unwrap, allow pie to thaw slowly in the refrigerator about an hour, garnish with whipped cream and serve.
