Florida Orange Pancakes

This Florida Orange Pancakes recipe yields 4-6 servings.

2 egg yolks
1/2 teaspoon salt
2 tablespoons Florida honey
2 cups orange sections (crumble, do not break tiny sacs of juice)
1 cup sifted flour
1/2 teaspoon baking powder
2 egg whites stiffly beaten
1/2 cup butter and oil for frying
1/2 cup sour cream
1/2 cup orange marmalade

Beat egg yolks, salt and honey together; stir in orange sections, flour and baking powder and fold in beaten egg whites.

Heat butter and oil to cover bottom of skillet, about 1/8 inch.

Drop batter by tablespoons.

Brown on both sides.

Serve hot.

Garnish with sour cream and marmalade.
